Aroma compounds generated from thermal reaction of L-ascorbic acid with L-cysteine

چکیده
The reaction of L-ascorbic acid with L-cysteine in heated aqueous solution (141 ± 1 C) at five different pH values (5.00, 6.00, 7.00, 8.00, or 9.00) for 2 h, resulted in the formation of a complex mixture of aroma volatiles. The volatile compounds generated were analysed by SPME–GC–MS. The results gave 43 aroma compounds. The reaction between L-ascorbic acid and L-cysteine led mainly to the formation of alicyclic sulphur compounds, thiophenes, thienothiophenes, thiophenones, thiazoles and pyrazines, most of which contain sulphur. Many of these volatiles had meaty flavour. The origin of many of the compounds was explained. The studies showed that thienothiophenes and thienones were formed mainly at acidic pH. In contrast, higher pH values could promote the production of thiophenes, thiazoles and pyrazines. 2010 Elsevier Ltd. All rights reserved.

Mechanism of formation of sulphur aroma compounds from l-ascorbic acid and l-cysteine during the Maillard reaction.
The sulphur aroma compounds produced from a phosphate-buffered solution (pH 8) of l-cysteine and l-, l-[1-13C] or l-[4-13C] ascorbic acid, heated at 140±2°C for 2h, were examined by headspace SPME in combination with GC-MS. MS data indicated that C-1 of l-ascorbic acid was not involved in the formation of sulphur aroma compounds. The sulphur aroma compounds formed by reaction of l-ascorbic acid...
متن کاملRemoval of Cysteine (an Aliphatic Amino Acid) by Natural Clinoptilolite
Amino acids have been extensively used in several processes of the pharmaceutical and food industries. Treatments for the recovery and reuse of the wastewaters generated from these processes are few and little known. This work aims at studying the influence of different variables on the sorption of L-cysteine, contained in aqueous solutions, on clinoptilolite mineral. L-Cysteine (Cys) was s...

Objective: Polyphenol oxidase or PPO (EC 1.14.18.1) is considered the enzyme responsible for quality deterioration and browning in different fruits during postharvest period. The objective of this study was to evaluate the antibrowning (inhibition of polyphenol oxidase activity) effect of Cysteine, Ascorbic acid, citric acid, kojic acid and glycine at two different pH (6 and 7) in hawthorn. متن کاملAlleviation of Adverse Effects of Copper on Allium cepa L. by Exogenous Ascorbic Acid Application
Abstract In this study ameliorative effects of ascorbic acid (0.5 mM) on onion (Allium cepa L. cv. Red Azarshahr) under copper stress (Cu: 6.5 μM) were studied. Fresh weights of leaves and roots were reduced in seven week old plants under excess copper condition. Cu stress also reduced membrane stability index in leaves. There was a considerable increase in H2O2 content and lipid peroxidation i...
